These bites are so delicious and easy to make! Haven and I had a blast smashing the sweet potatoes up, rolling them out into little bite sized balls and then coating them with ground nuts. Perfect sensory activity for the little ones in your life. Enjoy them at room temperature or chilled in the fridge!
1 lb (about 3) white, orange, or purple sweet potatoes, peeled and cut into cubes
1 Tbsp brown sugar
1/2 c ground peanuts, macadamia nuts, or sesame seeds
Dash of cinnamon
Boil or steam the potatoes until tender
Once cool enough to handle, roll potatoes into walnut-size balls
On a clean surface, spread a layer of ground nuts of your choice or sesame seeds. Gently roll the potato balls in the nuts to coat.
Powder with cinnamon to serve.
